Tavo Pinot Grigio

iLauri is based in Loreto Aprutino in Abruzzo — the name comes from the laurel trees that once covered the place — and Tavo is their Veneto venture, named for the river that rises at nearly 2,000 meters on the Gran Sasso and runs to the Adriatic. A single parcel in the Veneto, fermented in temperature-controlled stainless, then two months' rest before bottling. Eco-compatible farming, powered entirely by wind-generated electricity. Pale straw with green hues; melon, orange blossom, and mango on the nose over a silky, elegant texture — more perfumed than the average Pinot Grigio, and dry and crisp underneath.

Food pairing: Parma ham, goat cheese, asparagus risotto, white fish — and shrimp scampi or a simple frittata.
